VINO SPUMANTE PAS DOSÉ

VINIFICATION:
The grapes are carefully selected by hand from the oldest vines of the vineyard (around 50 years old). After a soft pressing, the must is fermented at a controlled temperature. Small percentages of reserve wines from previous vintages are blended with the wine of the current year, in order to give more depth and continuity to the unique style and character of this Spumante. Bottling and secondary fermentation with selected yeasts take place during the Spring. After at least 60 months of aging on the lees, disgorgement takes place with the use of a special liqueur d’expédition different from any other sparkling wine of the estate. The wine is then left in the cellar for about 6 months before it is released to the market.

ORGANOLEPTIC CHARACTERISTICS:
Pale yellow in colour, it has a fine and persistent perlage, with a soft but structured head. The bouquet is ample, with hints of bread crusts dried fruits and vanilla. On the palate it is bodied, harmonious, fresh, elegant and persistent.

ALCOHOL CONTENT: 12 %vol.

COMBINATIONS:
Excellent as an aperitif and goes well with all courses of a meal.

SERVING TEMPERATURE: 6-8°C

STORAGE: In a cool and dry place for 16-20 months after disgorging.
